Takuan is pickled daikon radish. Takuan is often served alongside other types of tsukemono in traditional Japanese cuisine, and is also enjoyed at the end of meals as it is thought to aid digestion. This popular pickle is made by fermenting and preserving daikon radish in a mixture of salt, sugar, and rice bran or vinegar, resulting in a distinctive sweet and tangy flavor.
